Most of the ingredients listed in this cookbook are either certified organic or as natural as possible. The majority of the spices I use in the cookbook are non-irradiated. The meats are organic, free-range, or as natural as possible (i.e., hormone and steroid free). Most grocery stores carry the common ingredients found in the recipes found in this cookbook. Due to stomach and intestinal problems, I have been gluten free now for a few months. When I was diagnosed with a gluten sensitivity, I was so upset because I've eaten pasta, breads, cakes and other wheat products my whole life. I tried store bought, gluten free bread and I was so disappointed in the taste and texture. I turned to rice cakes and corn cakes in place of bread. When I tried the Flatbread recipe from The Sensitive Chef Cookbook, it not only tasted delicious but I could use it and enjoy it just as I would "normal" bread. It stays soft, freezes well and makes the best sandwiches. Among my favorite recipes from this cookbook is the Pantry Surprise, which is so easy to prepare and I can add extra ingredients to fit our taste. It makes a great side dish or a main dish. Also, the Applesauce Breakfast Cake is Mmm, Mmm, Mmmm. This wonderful recipe can be used as a breakfast, a dessert or a pick-me-up snack. This is one cake that I'm okay with going back for seconds! It is so moist and has a great texture...good enough for me to forget it's gluten free. My husband does not have a gluten sensitivity but he loves the recipes in this book. I've tried so many of the recipes and they are all delicious. These recipes have given me motivation and all sorts
